Artichoke Dip

1 cup Mayonnaise
1 cup Cheddar cheese
1 cup Parmesan cheese
1 can Artichoke hearts - chopped
1 can Chopped green chilies (small can)
1 small Onion - finely chopped

Preheat oven to 350 degrees. Mix everything together in 1 qt casserole. Heat for 20 minutes or until cheese is melted. Serve with tortilla chips or crackers.

Homemade Boursin Cheese

Homemade Boursin Cheese

Buy this treat in the store and you'll pay a lot more!

Serves 8

8 oz. Package of cream cheese, softened
1/4 cup butter, softened
1 clove of garlic, minced
1/8 tsp. pepper
1/8 tsp. thyme
1/8 tsp. basil
1/8 tsp. dill
1/2 tsp. oregano
1/4 tsp. salt
pinch chives
pinch parsley

Cream together. Refrigerate before serving. Serve with crackers.

Kick-off Kielbasa

2 lbs. Kielbasa sausage
2 cups Ketchup
2 cups Grape jelly

Pour ketchup and jelly into a slow cooker. Turn the heat to medium. Stir occasionally until jelly and ketchup melt. When the mixture becomes a thin glaze, add the kielbasa and cook until the kielbasa is hot.

Pickle Roll Ups

Pickle Roll Ups

Serves 8 to 10

1 jar whole dill pickles
8 oz. Package of cream cheese, softened
2 packages of thin sliced ham or corned beef

Lay out a single layer of the ham or corned beef. Spread with a thin layer of cream cheese. Blot the pickles until they are dry. Then lay the pickle at one end of the ham or corned beef and roll up. Refrigerate for an hour or more. When you are ready to serve, slice into five or six pinwheels. (Save money by using pre-packaged ham or corned beef .)

Ranch Oyster Crackers

1 Package Oyster/Soup Crackers
1 Package Dried Ranch Dressing Mix
½ cup canola or vegetable oil
½ teaspoon dried dill

Mix together oil, ranch dressing mix and dill. Place crackers in a large bowl or zip-top bag. Drizzle oil and seasoning mixture over crackers tossing to ensure an even coat.

Spread crackers on large baking sheet and place in a 250º oven for 10-15 minutes or until dry, stirring once. Allow to cool and store in an airtight container.

Taco Dip

8 oz. Jack/Cheddar Cheese Combo
8 oz. Cream Cheese
16 oz. Sour Cream
1 can Chili
8 oz. Chunky Salsa

Mix cream cheese and sour cream together. (White layer) Mix Chili and Salsa together. (Red layer) In a 1 qt. Microwaveable bowl smooth ½ of white layer on bottom. Then smooth ½ of the red layer on top of white. Sprinkle ½ of Jack/Cheddar Combo on top of red layer. Repeat and finish with cheese combo on top. Microware for five minutes or until hot. Serve with tortilla chips.
